Pistachio Butter Cookies!

Ingredients:

  • 1 cup Fueled by AF Pistachio Butter
  • ½ cup coconut sugar (or brown sugar)
  • 1 egg (or flax egg for vegan)
  • ½ tsp baking soda
  • ½ tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ cup chopped pistachios (optional)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix pistachio butter, sugar, egg, baking soda, vanilla, and salt until smooth.
  3. Fold in chopped pistachios if using.
  4. Scoop dough onto the baking sheet and flatten slightly.
  5. Bake for 8-10 minutes or until edges are set.
  6. Let cool & enjoy!
