Pistachio Butter Cookies!

Ingredients:
- 1 cup Fueled by AF Pistachio Butter
- ½ cup coconut sugar (or brown sugar)
- 1 egg (or flax egg for vegan)
- ½ tsp baking soda
- ½ tsp vanilla extract
- ¼ tsp sea salt
- ¼ cup chopped pistachios (optional)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix pistachio butter, sugar, egg, baking soda, vanilla, and salt until smooth.
- Fold in chopped pistachios if using.
- Scoop dough onto the baking sheet and flatten slightly.
- Bake for 8-10 minutes or until edges are set.
- Let cool & enjoy!
