Almond Butter Neapolitan Donuts


  • 1 1/4 c Oat flour
  • 2 1/2 tbsp coconut flour - sifted
  • 1 tsp baking powder
  • 1 egg, flax egg, or egg substitute 
  • 1/2 c thin drippy @fueledbyaf almond butter
  • 3/4 c non-dairy milk
  • 1 tbsp lemon or orange juice
  • 2 tbsp yogurt or applesauce 
  • 3 tbsp monkfruit or cane sugar
  • 3 tbsp maple syrup
  • Pinch sea salt


  • 1/4 c coconut yogurt, 2 tbsp coconut butter, 2 tbsp almond milk, Beet powder 
  • Ganache: 2 oz dark chocolate, 3 tbsp almond milk, pinch salt 
  • Coconut butter, for drizzling 
  • Fueled by AF Protein Bites for garnish 


  1. Grease a donut pan with oil. 
  2. Mix oat flour, coconut flour, and baking powder in a large bowl.
  3. Make the flax egg in a medium size bowl then whisk in nut butter, milk, lemon/orange juice, yogurt/applesauce, sweeteners, and salt until smooth.
  4. Add the wet to the dry and mix to combine.
  5. Divide between 4-6 donuts.
  6. Bake at 350 for 10-15 minutes or until centers are firm and puffy.
  7. Cool to room temperature and carefully remove from pan.
  8. Bring the icing ingredients to room temperature and stir together.
  9. Dip the donuts into the icing, fill the center of each donut with ½ brownie protein bite, then drizzle with ganache and coconut butter.
  10. Decorate with coconut flakes, mini chocolate chips and/or cacao nibs.
  11. Store refrigerated and bring to room temperature or heat slightly before eating =)
