Almond Butter Neapolitan Donuts
Ingredients:
- 1 1/4 c Oat flour
- 2 1/2 tbsp coconut flour - sifted
- 1 tsp baking powder
- 1 egg, flax egg, or egg substitute
- 1/2 c thin drippy @fueledbyaf almond butter
- 3/4 c non-dairy milk
- 1 tbsp lemon or orange juice
- 2 tbsp yogurt or applesauce
- 3 tbsp monkfruit or cane sugar
- 3 tbsp maple syrup
- Pinch sea salt
Icing:
- 1/4 c coconut yogurt, 2 tbsp coconut butter, 2 tbsp almond milk, Beet powder
- Ganache: 2 oz dark chocolate, 3 tbsp almond milk, pinch salt
- Coconut butter, for drizzling
- Fueled by AF Protein Bites for garnish
Directions:
- Grease a donut pan with oil.
- Mix oat flour, coconut flour, and baking powder in a large bowl.
- Make the flax egg in a medium size bowl then whisk in nut butter, milk, lemon/orange juice, yogurt/applesauce, sweeteners, and salt until smooth.
- Add the wet to the dry and mix to combine.
- Divide between 4-6 donuts.
- Bake at 350 for 10-15 minutes or until centers are firm and puffy.
- Cool to room temperature and carefully remove from pan.
- Bring the icing ingredients to room temperature and stir together.
- Dip the donuts into the icing, fill the center of each donut with ½ brownie protein bite, then drizzle with ganache and coconut butter.
- Decorate with coconut flakes, mini chocolate chips and/or cacao nibs.
- Store refrigerated and bring to room temperature or heat slightly before eating =)
